Food #3: Fish Sauce

Fish sauce is commonly used in Asian cuisine for its salty flavor. It is made from fermented fish and it is a common ingredient in many Asian dishes.

It has a very strong smell that can be difficult to tolerate for some people. The smell comes from the fermentation process, which breaks down the fish proteins into amino acids.

The amino acids produce ammonia and this is what gives the fish sauce its characteristic smell.
